(Stuvede snittebønner)
1 ½ lb (¾ kg) French beans
2 oz (50 g) butter
2 tablesp. (50 g) flour
About ¾ pint (4-5 dl) milk
3-4 tablesp. (1 dl) cream
Salt and ground white pepper
Grated nutmeg
Wash and string the beans, cutting them slantwise into lengths of about 1 inch (2 cm).
Steam until tender in salted water. Drain.
Make a white sauce with the butter, flour and milk, boiling well through and adding sufficient cream to obtain the desired consistency.
Season and add the beans.
Serve with meat balls and potatoes.
