The first new potatoes of the season are a great delicacy, especially those from the Danish island of Samsø.
All new potatoes, however, should be treated with respect.
Rub them between the fingers until clean, rinsing in cold water, and drop them into boiling, salted water and simmer until not quite cooked.
Drain off the water and steam gently until soft, shaking from time to time.
